Kahvaltı öncesi yazıyorum bu yazıyı. Zeynep daha ortalarda yok. Zeynep kullanıyor arabayı. O yoldan, ben yemeklerden sorumluyum. Ona sabah kahvaltısı için çavdar ekmeğine keçi peynirli ve domatesli bir sandviç yaptım. Adada da nerede yesek işlerine ben bakıyorum. Bu yüzden günde 6 kere az az değil çok çok yiyoruz. Nerede ne yedik hepsini anlatacağım. BOZCAADA MACERASI BOZCAADA ADVENTURE Good morning. It is 6:00 a.m. I start the day in Bozcaada with all my existence in the same mood as I do in İstanbul. It is nice and sunny here. I wonder if it is rainy in İstanbul. I am writing before breakfast. Zeynep is still not around. Zeynep is driving. She is responsible for the road and I am for the food. I made a cheese and tomato sandwich with rye bread for her breakfast. I am in charge of where to eat business. Therefore, we don t eat six times, but many more times. I will tell you what and where we have eaten. 82 İST&IST 26 83

2 İstanbul un yağmurlu havasını arkamızda bıraktıktan sonra Tekirdağ, Malkara, Keşan yolunu takip ederek Gelibolu dan Lapseki feribotuna biniyoruz. Çanakkale den Geyikli ye doğru yol alıp Geyikli ye gelince de Bozcaada feribotuna biniyoruz. Yol boyunca yeşil erik ve armut yiyor ve Joss Stone dinliyoruz. 1,5 saat feribot beklediğimiz için (gelsin tavla yanında 2 çay) saat 16:00 gibi ilk otelimiz 9 ODA ya varıyoruz. 9 ODA merkezde, Cumhuriyet Mahallesi nde geçen sezon ortasında açılmış butik bir otel. Başladıklarında 9 odaları olduğu için otel 9 ODA adını almış ama şu anda tam 19 odaları var. Ben otelin işletmecisinin söylediğine göre en güzel odada kalıyorum (Güzelden kasıt manzaralı ve en geniş oda benimki = 301 numara). Eşyaları odaya bırakıp hemen kendimizi sokağa atıyoruz. Makinem boynumda. Kısa bir yürüyüş sonrası akşamüzeri yemeği için (Öğle yemeği yemiş ve akşam yemeği de yemeyi planlayan bizler için saat 17:00 daki yemeğe verilecek daha güzel bir isim bulamadım) Cumhuriyet Mahallesi de, postanenin karşısında Çınar Çarşı Caddesi nin köşesinde (İstiklal Sokak) Corvus Şarap Dükkanı nın yanındaki Lodos a gidiyoruz. Ahşap masalar, kareli masa örtüleri, beyaz ahşap sandalyeler, fonda Rum müziği Ada rüzgarlı ancak bu ara sokağa güneş vuruyor. Menüyü ince eleyip sık dokuyarak on beş dakika inceliyoruz. Bunu gören Türkan Hanım (Sonradan Lodos un sahibi olduğunu öğreniyoruz) masamıza geliyor ve Ne yesek acaba? sorumuzu yanıtlıyor. Çekirdekleri alınmış kırma zeytin, İzmir tulum peyniri, ceviz ve sarımsaktan oluşan Ege mezesi, sakızlı enginar, zahter salatası, radika, turp otu, akdiken ve kaya koruğundan oluşan ot tabağı, soslu taze iç bakla, rezeneli sübye yahni ve Girit usulü mücver masamıza ilk gelenler. Yemeği sevdiğimizi anlayınca Türkan Hanım la sohbete dalıyoruz ve onu masamıza buyur ediyoruz. Ada, yemek tarifleri, yemek blogları üzerine konuşuyoruz. Türkan Hanım adanın en eskilerinden, Lodos u 1999 da açmış. O zamanlar adada pek restoran yokmuş sonra sonra gelişmeye başlamış. Lodos un mutfağında doğal olmayan, genetiği ile oynanmış ürünler yok. Örneğin mısır kullanmıyorlar, konserve ürün almıyorlar. Zahteri Antakya dan, salçayı ve baharatları Antep ten, börülceyi Balıkesir den alıyorlar. Çiftlik balığı mutfak kapısından girmiyor. Lodos un hemen arkasındaki Simyon Meyhane nin de işletmesini üstlenmiş Türkan Hanım. Ama iki restoranın konsepti tamamen farklı. Adı üstünde Simyon tam bir meyhane. Eski usul reçina kadehlerde şarap, balık mezesi, küçük bardakta rakı istersen, Simyon da kendine bir masa ayırtmalısın (Meraklısına: Türkan Hanım ın da bir yemek blogu var: Leaving the rainy weather of İstanbul behind and riding in the direction of Tekirdağ, Malkara and Keşan, we board the Gelibolu Lapseki ferry. After leaving Çanakkale and arriving Geyikli we get on the Bozcaada ferry. We eat green plums and pears and listen to Joss Stone all the way long. Since we wait for the ferry for 1.5 hours (and ask for a backgammon and teas), we arrive at our first hotel 9 ODA at about 16:00. 9 ODA is a boutique hotel in Cumhuriyet District in the centre, which opened in the middle of the last high season. As they had only 9 rooms at the beginning, it is called 9 ODA but now they have just 19 rooms. The hotel manager says that I am staying in the best room no. 301 (he means it is the largest room with the best view). Leaving our things in the room we rush out into the street. My camera is hanged on my neck. After a short walk, in order to have an afternoon meal (I can t find a better expression since we have already eaten lunch and planning to have dinner too), we go to Lodos, which is near the Corvus wine shop on the corner of Çınar Çarşı Street (İstiklal Sokak) opposite the post office in Cumhuriyet Street. Wooden tables, checked table clothes, white wooden chairs and Greek background music... It is windy on the island, however, this street is sunny at the moment. We browse the menu for fifteen minutes in detail. Noticing us, Türkan Hanım (who we learn later that is the owner of the Lodos) comes to our table and responds to our question What shall we eat? The first things brought to our table are cracked olives without cores, İzmir goat s milk cheese made in a skin, an Aegean appetizer made with walnut and garlic, artichoke with mastic, zahter salad, radika, radish leaves, a dish herbs composed of hawthorn and sour grapes, marinated fresh broad beans, stewed meat with fennel and Crete style mücver (a kind of vegetable patty). As we realizes that we like the food, we invite Türkan Hanım to our table and start chatting with her. We talk about the island, recipes and on different cuisine blogs. Türkan Hanım is one of the oldest people of the island. She started Lodos in1999. There used to be not so many restaurants on the island, they devleoped later on. In the cuisine of Lodos you can t find genetically modified products. For instance, they don t use any corns and conserved food products. They bring zahter from Antalya, tomato sauce and spices from Gaziantep and kidney-bean from Balıkesir. They don t use seafood from fishfarms. Türkan Hanım is also in charge of Simyon Pub, which is just behind Lodos. However, the design concepts of two restaurants are quite different. Simyon is a real pub. You should reserve a table at Simyon if you wish to have wine in old style wine cups made of pine wood, fish as appetizer and Turkish rakı in small glasses. 3 Türkan Hanım diğer müşterileri ile ilgilenmek üzere gidince masamızda sessizlik kaplıyor Zeynep le beni. Ben adayı anlamaya, çözmeye çalışıyorum. Zeynep ise yandaki boş evi satın alıp üstünü 2 odalı bir pansiyon, altını minik bir kafe yapsak mı diye planlar kuruyor. Bunları düşünürken adanın şaraplarından Corvus-Karga yı deniyor. Zaten sonra ne zaman satılık ev görsek Zeynep hep Alsak mı? diye bana soruyor. Bunlar olurken benim içimde It s just a perfect day çalıyor. Türkan Hanım ın karadut reçeli ile servis edilen sakızlı muhallebisinden adada kaldığımız süre zarfında kaç tane yediğimi sizinle paylaşmak ister miyim bilmiyorum Yediklerimizi eritelim diye yürüyoruz. Dükkânlara girip çıkıyoruz. Adanın merkezinde süs eşyaları, magnetler, takılar satan tezgâhlara bakıyoruz. Akşama doğru Polente de oturuyoruz, çay söyleyip tavlanın kapağını açıyoruz. Polente adını adanın en batı ucundaki fenerden alıyor. Sahibi Hüseyin Bey 4 yaşından beri adalı. Burası adanın girişinde mavi beyaz masa & sandalyeleriyle adaya ayak basanları karşılayan ilk mekan. İçeriden güzel müzikler geliyor. Sonradan Hüseyin Bey ile bir akşam yemeğinde tanışıyor, sohbet ediyoruz. O zaman oğullarından birinin DJ olduğunu, burada çalan harika parçaları da onun seçtiğini öğreniyorum. Yaşasın 90 lar!!! Polente de bir süre gelen geçeni seyrediyoruz. Mutluyuz. Tom Hodgkinson un Tembel Ayaklanması isimli bir kitabı var, kitabında yan gelip yatmanın manifestosunu anlatır. Kitapta tembellerin gerçek dünyanın dışında yaşadığını söylüyorlar der. Galiba doğru. Şu anda tembellik yapıyoruz ve burası gerçek dünyadan o kadar uzak ki. Yetişmesi gereken projeler, yapılması gereken işler, yazılması gereken yazılar. Hepsi kilometrelerce uzakta. When Türkan Hanım leaves us to deal with her other customers, silence dominates me and Zeynep at our table. I try to understand and analyse the island. Zeynep dreams of buying a nearby house and changing it into a pension with with rooms on the second floor and making the first floor a small café. While imagining these things, she tries Corvus-Karga, one of the wellknown wines of the island. From then on whenever we see a house on sale she keeps asking me if we can buy it. Meanwhile, It s just a perfect day plays inside me. By the way, I don t know if I would like to share with you how many of the mastic puddings of Türkan Hanım served with black mulberry jam I have eaten during the time I stay on the island... We go for a walk to digest what we eat. We just go in and out of shops. We have a look at the stalls selling souveniers, magnets and accessories. We go to Polente, sit at a table, ask for tea an d open the cover of a backgammon box towards evening. Polente is named after a lighthouse bult on the west end of the island. Hüseyin Bey, the owner, is a native islander since he was 4. With its blue and white chairs, this café, located at the entrance to the island, is the place which first welcomes the visitors arriving at the island. He hear nice music echoing from inside the café. Later on,, we meet Hüseyin Bey at dinner and have a chat with him. Then I know that one of his sons is a DJ and he is the one who chooses these wonderful songs. Cheers for 90 s!! We watch the passers by at Polente for a while. Weare happy. In his book called How to be Idle Tom Hodgkinson gives a manifesto for being idle. He says the idlers are said to be to be living outside the real world. I think he is right. Now we are idle and we are so far away from the real world that all the projects to be carried out, things t be done and the texts to be written are many kilometers away. Akşam rakı & balık muhabbeti istemeyene alternatif et, makarna ve risotto yapan Bakkal a gidiyoruz. Burada Bakkal ın sahibi Burak ın köpeği Paris ile tanışıyoruz. Bakkal ın hikayesini daha sonra anlatacağım. Akşamları ada serin, Bakkal ın polar şalları yetişiyor imdadımıza. Zeynep farklı farklı şarapların tadına bakıyor. Her şeyden biraz sohbet ediyoruz. Yeni kararlar alıyoruz, yeni planlar yapıyoruz. Adaya ne zaman tekrar gelsek diye takvime bakıyoruz. Keyfimize diyecek yok, yol yorgunluğu çöküyor üzerime yavaştan. Otele gidip yatıyoruz. Dedim ya erken kalktım, makinemi aldım sokağa çıktım. Yandaki evde oturan Rum teyzelerle sabah sohbeti yaptım. Yarın pazara gideriz diye sözleştik. Zeynep geldi az önce; Hadi kapat şu bilgisayarı da denize gidelim diyor. İkinci gün sabah erkenden Bozcaada nın en ünlü plajlarından biri olan Habbele ye gidiyoruz. Günün büyük kısmını burada tembellik yaparak geçiriyoruz. Bozcaada nın plajlarının çoğunda tesis yok. Habbele Mitos Beach istisna olanlardan. Ancak tesis diyorsam gözünüzün önüne Bodrum- Türkbükü gelmesin. Hasır şemsiye, plastik şezlongtan söz ediyorum. Mitos Beach te en hoşuma giden şey kuma ilk adım attığımda gözüme çarpan tabela oluyor. Tabelada ne mi yazıyor; Lütfen ayak izinizden başka iz bırakmayınız. We go to Bakkal, which serves malama and risotto as an alternative for those who wouldn t like rakı&fish chat. There we meet Paris, the dog of the owner of Bakkal. I will tell you the story of Bakkal later. It is cool in the evening, however, the polar shawls of Bakkal are of great help. Zeynep tastes various wines. We talk about almost everything. We make new plans and decisions. We check the calendar about when to come to the island again. We are enjoying ourselves fully and we naturally feel tired after all our long journey. We leave for our hotel and go to bed. I get up early, take my camera and go out. I have a morning chat with the Greek women living in the opposite house and agree to go to the market the next morning. Zeynep comes then and says, Turn off your computer and let s go swimming. On our second day we go to Habbele early in the morning, one of the best known beaches of Bozcaada. Most of the beaches of Bozcaada aren t well- equipped. But Habbele Mitos Beach is an exception. You shouldn t picture e a kind of Bodrum Türkbükü in your mind. By well -equipped I mean we have straw sun shades, plastic lounge chairs. The thing I like best on the Mitos Beach when I first stepped in is the notice which says Please don t leave any other trace except your foot steps. 86 İST&IST 26 87

4 Ayazma da Vahit in Yeri ne gidiyoruz akşamüzeri atıştırması için. Ancak öyle methedildiği gibi nefesimi kesmiyor burası, manzarası güzel, o ayrı. Yemekleri bana göre biraz fazla yağlı ve tuzlu. Menüde kabak çiçeği dolma, ahtapot ızgara, peynir ezmesi ve sigara böreği var. Zeynep bu sefer Talay ın şaraplarını deniyor. Vahit in Yeri nin hemen aşağısında Ayazma Plajı var. Hafta içi olmasına rağmen kalabalık. Zeynep Polente de gün batımı keyfi yapmak istiyor, ben makinemi alıp sokak aralarında dolanmak istiyorum. Yemek saatinde buluşmak üzere ayrılıyoruz. Arnavut kaldırımı sokaklar, beyaz boyalı evler, renkli kapılar. Ada gerçekten güzel. Turizmin gelişmesi ile adanın her yerinde bir inşaat başlamış. Ada yeniden yapılanıyor. Ben yemek öncesi Bakkal a Paris i görmeye gidiyorum. Bakkal ın sahibi Burak İstanbul da işletmeciymiş. O da şehir hayatından kaçanlardan. 3 yıl önce gelmiş adaya. Bakkal ilk zamanlar adada olmayan şeyleri (%50 organik ürünler, Ipod, güneş gözlüğü, şarküteri ürünleri vb.) satıyormuş. Sonra Burak ın İtalyan bir arkadaşı gelmiş, yemek yapmış. İtalyan arkadaş gitmiş ama müşteriler yemek yemeğe gelmeye başlamış. Burak da önlüğü takmış, mutfağa girmiş. Mutfakta Burak tan başka yemek yapan biri yok. Zaman içerisinde ekibe garsonluk yapan, dövmelerine hayran olduğum Nisan ve bulaşık ve temizliğe yardımcı sevgilisi dahil olmuş. Bakkalın nesi meşhur derseniz kokteylleri, gelincik ve üzüm likörü. Ben içmiyorum ama Zeynep e faydam dokunsun diye Burak a ada şaraplarını soruyorum. Adanın en çok bilinen üreticileri; Corvus, Talay, Çamlıbağ, Gülerada, Ataol ve bu sene şaraplarını satışa sunan Amedeus. Burak Corvus un Bornova-Misket (beyaz), Cabernet Sauvignon & Kuntra (kırmızı) ve Cruturk (kırmızı) şaraplarını, Çamlıbağ ın Vasilaki sini (beyaz) ve Talay ın da Tenedos (kırmızı) şaraplarını öneriyor. Akşam yemeği için sahile iniyoruz. Burada sıra sıra balık restoranları var. Yakamoz, Tenedos, Koreli. Listemde Gümüş Otelin önünde, Cümle Alem Cafe & Bar ın yanındaki Yosun var. Denizin dibinde bir masaya oturuyoruz. Doğru yeri tercih ettiğimizi hemen arka masamıza Mehmet Gürs ve ailesinin oturmasından anlıyoruz. Meze dolabı olayını pek sevmesem de sahilde işler böyle yürümüyor. Susam otu, börülce ve istifno dolu bir ot tabağını bir çırpıda mideye indiriyorum. Midye dolmaları Zeynep ile paylaşmak zorunda kaldığım için kendime ikinci bir tabak söylüyorum. Zeynep deniz tarağı yiyor. Yemek sonrası çocukluğumun tatlısı lokma alıp yürüye yürüye otele dönüyoruz. Yosun un çaprazında MADO var. Ada tüm zincir restoranlar, kafelerden uzakken neden MADO var diye kendimce sitem ediyorum. Bu durumu beğenmiyorum. Bakkal ın orada çay molası veriyoruz. Burak ın misafirleri var. Beni adada geçen yaz açılan Limani Otel in sahibi Akın ile tanıştırıyor. Akın 9 sene Sidney de yaşadıktan sonra o adadan çıkıp bu adaya gelmiş. Sohbet güzel ama yorgunluk çöküyor. Akın bizi Limani yi görmeye, kahve içmeye davet ediyor. Sabah için sözleşip odamızın yolunu tutuyoruz. Paris çoktan uykuda. A young boy is walking a boxer, a sixmonth old dog. He is wearing Crogs sandals.. He meets the girl in bikini who has been smiling at since morning, thanks to his dog. After having lunch there we set off in the direction of Ayazma. Just about to move I realize that the girl in bikini is wearing the boy s Crogs. The sand is so hot that the girl can t walk barefooted. Our boy is just a gentleman. By the way, 2 lounge chairs + 1 sunshade = 27 TL. no credit cards. Showers and toilets are available as long as you aren t too hygienic minded. In order to have an afternoon snack we go to Vahit s place at Ayazma. Here is not so breathtaking as it is praised, but it has a nice view. I found the food somewhat fatty and salty though. The menu includes stuffed zucchini flowers, mashed octopus and pies in cigar forms. Zeynep tries Talay wines this time. Just down Vahit s place is the Ayazma Beach, which is crowded although it is during week. Zeynep prefers to enjoy the sunset at Polente and I want to wander around the streets with my camera. Agreeing to meet for dinner, we separate. Cobbled streets, whitewashed houses, multicoloured doors This is a really nice island. Together with the growth of tourism,construction works are in progress everywhere on the island. The island is being reconstructed. I go to Bakkal to see Paris before dinner. Burak, the owner of Bakkal, used to be manager in İstanbul. He is also one of those who escapes from city life. He came to the island 3 years ago. He sold the things which didn t use to be found on the island then (such as 50% organic products, ipods, sunglasses, delicacies etc.). Then, a friend of Burak s comes and starts cooking. After the Italian friend leaves, the customers flock in. Putting on his apron, Burak goes in the kitchen. He is the only person cooking then. In the course of time a waitress, whose tattoos I love, joins the team and helps the washing up and cleaning as a girl friend. Bakkal is famous for its cocktails, poppy and grape liquors. I personally don t drink, but ask Burak about the wines of the island just to help Zeynep. The bestknown producers of the island are Corvus, Talay, Çamlıbağ, Gülerada, Ataol and Amedeus, who starts selling its wines this year. Burak recommends Bornova-Muscat (white), Cabernet Sauvignon&Kunta (red), Cruturk (red), Vasilaki of Çamlıbağ (beyaz) and Tenedos of Talay wines. We go down the seaside for dinner. There are a lot of fish restaurants lined along. On my list is Yosun next to Cümle Alem Café Bar in front of Gümüş Hotel. We found a table just by the sea. Seeing Mehmet Gürs and his family sitting at he next table, I know that I make the right choice. Though I don t like the idea of the appetizer cabinet, it isn t easy to deal with things at the seaside. I quickly eat up a dish of herbs full of sesame leaves, kidney beans and istfno. Since I have to share stuffed mussels with Zeynep, I order another dish just for myself. Zeynep eats a dish of escallops. After dinner we go back to our hotel walking and eating some doughnuts, which reminds me of my childhood days. We see MADO almost opposite Yosun. Since there aren t any chain businesses, I protest the idea of the existence of Mado on the island. We give tea break at Bakkal. Burak has some guests. He introduces me to Akın, the owner of Limani Hotel, which started last summer. He came to this island after living in Sidney for 9 years. Although the talks are nice, we feel exhausted. Akın invites us to see Limani and have coffee there. We agree on that and head for our room. Paris is alredy asleep. 88 İST&IST 26 89

5 Adada 3. günümüz. Zeynep kahvaltı sonrası üzüm bağlarını görmeye ve şarap tatmaya gidiyor. Ben yürüyüşe çıkıyorum. Komşu teyzelerle pazara, sonrasında kartlarımı göndermek için postaneye gidiyorum. Akşam yemeği için Maya ya rezervasyonumuz var. Sahibi Selçuk Aykan arıyor. Kendisi sizli-bizli hitap şeklinden hoşlanmıyor, Türkiye de iş adamları sizli-bizli hitap eder birbirine diyor. Et mi, balık mı? diye soruyor. 2 gündür öğlen akşam balık yiyoruz, bu sefer et olsun diyorum. Bize ne hazırlayacak meraktayım. Sabah kahvaltısında akşam yemeğini düşünür haldeyim ama zaten adada yapacak daha iyi bir şey yok. Ya yemek yiyeceksin ya ne yiyeceğini düşüneceksin. Zeynep gelince Limani ye gidiyoruz. Adadan dönmek yerine bir gece de Limani de kalmaya karar veriyoruz. Zeynep Rıfkı ile samimiyet kurarken ben Limani nin sahibi Akın ile o Asos a gitmeden kısa da olsa sohbet ediyorum. Rıfkı, Akın ın Fransız bulldog cinsi henüz yavru köpeği. Öğreniyorum ki Limani (eski Zafer Otel) adanın ilk oteliymiş. 40 yıldır bakım & onarım görmeyen bu otelin işletmesini almış Akın. Otel işletmecisi dedim ama Akın 29 yaşında genç bir girişimci. Kıbrıs ta okurken oradan öğrenci olarak Sidney e gidiyor. Halkla ilişkiler, reklamcılık dersleri arasında harçlık kazanırım diye restoranlarda çalışmış. Sonra pub & restoran işletmiş. Türkiye ye dönmeye karar verince de kendine yer bakmaya başlamış. Ailesinin Çanakkale de de Limani isimli bir oteli var ( Akın hafta sonları adaya sık sık gelir, arkadaşlarının evlerinde kalırmış. O tatillerden birinde bulmuş burayı. 8-9 ay gibi kısa bir sürede inşaatı tamamlamış ve 11 odalı bir butik otel yaratmış. Odaların dekorasyonu sade ancak her ihtiyaca cevap veriyor. Sabah kahvaltılarının ve akşam yemeklerinin yendiği Raki restoranın hafif retro tarzı dekorasyonuna ise bayılıyorum. Tezgah üzerindeki manav tartısı, mavi koltuklar ile eski telefon benim olsun istiyorum. Akın otelle ilgili projelerini, hayallerini de anlatıyor. Arka bahçede doğal tarım yaparak kendi sebze ve meyvelerini yetiştirmek istiyormuş. Doğal üretimden söz ederken çevre konusuna da değiniyoruz. Otelde plastik şişe kullanılmıyor, sular bile cam şişede ikram ediliyor, mutfakta kullanılan yağlar ayrıştırılıyor ve Çanakkale deki sanayiye gönderiliyormuş. Çevreye duyarlı olması ile de Limani kalbimi kazanıyor. Zeynep Rıfkı ile geliyor, Akın a iyi yolculuklar diliyoruz ve denize girmek üzere Akvaryum koyuna gidiyoruz. Akvaryum koyunda su cam gibi ve çok soğuk. Dün denize ayağını sokmaktan ileri gidemeyen ben koşarak giriyorum suya. Zeynep kıyıdan bana el sallıyor, onun suya girmeye niyeti yok. Denizde adada yazlığı olan teyzelerle sohbet ediyorum. Sulubahçe ye de gidin denize girmeye diyorlar. Akvaryum da tesis yok, duş, yok, tuvalet yok. Bikinisini havlu altından iki dakikada değiştiren kadınlara şapka çıkartıyorum. It is our third day on the island. Zeynep goes to visit vineyards and to taste vine. I go for a walk. I drop in our neighbours, the women opposite our hotel then I go to the open market and to the post office to send some postcards. We have reservation for dinner at Maya. Selçuk Aylan, the owner of the restaurant calls us. He doesn t like to be addressed formally and says Turkish businessmen speak to each other in a formal way. Meat or fish? he asks. We ve always eaten fish for lunch and for dinner, we d better eat meat this time I say. I wonder what he is going to prepare for us. I think of dinner while I eat breakfast just because there isn t any better thing to do on the island. You should either eat something or think what you are going to eat next. We go to Limani when Zeynep comes. We decide to stay at Limani one more night. While Zeynep is getting acquainted with Rıfkı, I have a short chat with Akın, the owner of Lİmani, before we leave for Assos. Akın s French boxer is still a puppy. I learn that Limani (the former Zafer Hotel) is the first hotel on the island. Akın isin charge of this hotel, which hasn t been renovated for 40 years. The hotel manager Akın is a 29 year old enterpriser. He went to Sidney when he was a student in Cyprus. While studying public relations and advertising, he worked at restaurants so as to make his living. Then he runs a pub& restaurant there. When he decides to get back to Turkey, he starts looking for a place to run. His family has got a hotel called Limani in Çanakkale ( Akın used to come to the island and stay there at his friends house. He finds this place during one of those trips to the island. He completes the construction in a short time as 8-9 months and creates a 11- room boutique hotel. The correlation of the rooms is simple but they serve all needs. I love the light traditional decoration of the Raki restaurant where breakfast and dinner are served. I d like to own the greengrocer scale placed on the counter, the blue armchairs and the old telephone. Akın tells us his projects and dreams about the hotel. He wishes to grow his own vegetables and fruits with natural farming in the back garden. Besides natural production, we also talk about the environmental issues. No plastic bottles are used in the hotel, water is served in glass bottles, the oil used in the kitchen is separated and sent to Çanakkale for the related industry. Being so sensitive to the environment, this hotel appeals to me further. Zeynep shows up with Rıfkı, we wish Akın a nice trip and go swimming in the Akvaryum Bay. Water is crystal clear but rather cold in the bay. Although I didn t dare to go any further than walking at ankle deep yesterday, today I run into the sea excitedly. Zeynep waves at me at the seaside; she doesn t wish to swim at all. I talk to the women who own summer resort houses on the island. They say, Why don t you go to Sulubahçe to swim? There aren t any facilities here in Akvaryum, no showers, no toilets. I admire the women who change their bikinis in a few minutes under their towels. 90 İST&IST 26 91

Mücver, zeytinyağlı fasulye ve semizotu salatası sipariş veriyorum, her birinden yarım porsiyon. Zeynep mantı istiyor. Benim fasulyeme ekmek banmaya başladığı zaman garsona dönüp; Bu kadının yemeğini hemen getirin yoksa aç kalacağım diyorum. Garson halimize gülüyor, biz daha çok gülüyoruz. Yemek sonrası Bi tavla patlatsak, bi de demli çay olsa diyor Zeynep. Koreli de demli çay olmadığını öğreniyoruz. Hayal kırıklığı. Zeynep; Nasıl demli çay olmaz, bunu da yaz bloguna diyor. Sulubahçe ye gelince havlumu seriyorum, benim için uyku vaktidir diyerek gözlerimi kapatıyorum. Çalışan insan için ne büyük lütuftur öğle uykusu. Akşamüzeri Zeynep le denize giriyoruz. Otele dönerken Lodos a uğrayıp karadut reçeli ile servis edilen sakızlı muhallebiden gene yesek mi diye düşünürken kendimizi Lodos ta sakızlı enginar, zahter salatası, taze iç bakla, Girit mücveri sipariş ederken buluyoruz. Türkan Hanım bizi tekrar görmekten memnun. Kendisini masamıza buyur ediyoruz. Sohbet gene ada hayatı ve yemek üzerine. Bendeniz halimden memnun, ağzım, gözlerim, kulağım, midem bayram etmiş oturuyorum. Biz tam kalkarken Lodos un garsonları için özel dikilmiş mavi t-shirtler geliyor. Türkan Hanım bizi de demirbaştan sayıyor ve t-shirt hediye ediyor. İyi, güzel yedik de 2 saat sonra akşam yemeği rezervasyonumuz var. Bu mide sınırlarını ne kadar zorlar? Adadan kaç kilo alınıp dönülür? Otele gidip, derhal hazırlanıp çıkıyoruz. We head towards Sulubahçe making sure that we feel hungry. We have lunch at Koreli, the oldest restaurant on the island which has been run for three generations. I order half portion of each of mücver, beans cooked with olive oil and purslane salad dishes. Zeynep asks for mantı. When she started to dip her piece of bread into the stew of my beans, I call the waiter and say, Please bring this lady s food or else I will die of hunger. The waiter smiles at us and we laugh a lot. After lunch Zeynep says, What about playing a game of backgammon and have some nice cup of tea? We feel disappointed when we know that they Koreli don t serve any tea at Koreli. Zeynep says to me angrily, How come they don t serve tea? Take a note of this in your blog, please. When we arrive at Sulubahçe, I spread my towel on the ground and lie down on it and close my eyes. What a nice gift it is for a working person to have a nap in the afternoon! I have a swim with Zeynep in the evening. We are just about to wonder if we eat that pudding with mastic served with black mulberry jam then we change our minds and happen to order artichoke with mastic, zahter salad, fresh kidney beans, Crete mücver at Lodos. Türkan Hanım is pleased to see us again. We invite her to our table. The talks are again on life on th island and foods. I am personally quite satisfied with what I hear, see and eat. Specially made blue T-shirts for the waiters of Lodos are brought. Considering us as the members of the staff, Türkan Hanım gives us each a T-shirt as a present. Though we have eaten very well, we still have a reservation for dinner in two hours. I don t know how long this stomach of mine is going to bear so much food? How much weight am I going to put on? We go to our hotel, get prepared and leave for dinner again. 92 İST&IST 26 93

7 Selçuk Aykan ın bağ evini akşam karanlığında bulmak o kadar da kolay olmuyor. Adanın içerisine giden yolda 2. Amerikan Çeşme yi geçtikten hemen sonra sola döndüğünüzde toprak yolu takip edip ulaşıyorsunuz bağ evine. Selçuk bizi kapıda karşılıyor. Maya da sadece 3 kişi çalışıyor ve maksimum 12 kişi için yemek yapılıyor. Tüm yemekleri Selçuk kendi yapıyor ama yakın zamanda işe başlayan bir de yardımcısı var. Masamıza önce hepsi kendi imalatı olan farklı peynirlerle dolu bir tabak geliyor. Sonrasında da bir şarküteri tabağı, zeytinyağlı fasulye, havuçlu meze, sebze ızgara. Etlerimiz lüks restoranlardaki gibi tahta servis üzerinde sunuluyor, seçiyoruz ne istediğimizi. Selçuk mangalın başına geçiyor. Çok çeşit yok bizde ancak her şey taze, siz gelmeden 2 saat önce yapılıyor diyor. İlk sorusu Burcun ne? oluyor. Burcunu bilen ama yükselenini bilmeyen ben hemen canlı bağlantı ile anneme soruyorum. Doğum saatim öğreniliyor, Ipad ten bakılıyor yükselenime. Selçuk la burcumuz aynı ama yükselenimiz farklı. Sonra muhabbet işe geliyor. Selçuk Rusya, İngiltere, Suudi Arabistan gibi birçok ülkede çalışmış finans sektöründe. Sonra danışmanlık vermeye başlamış. Adaya yerleşmeye de kızı Konca Aykan sayesinde karar vermiş. Kızı bulmuş bu evi ona. Üç senedir yılın nerdeyse 10 ayını bu evde geçiriyormuş. finans sektöründe başkaları için yaşıyordum, şimdi ise kendim için yaşıyorum diyor. Küçük ama profesyonel bir mutfak yaptırmış. Şimdilerde kahvaltı ve akşam yemeği sunuyor misafirlerine. Evini çevreleyen yaklaşık 10 dönümlük bağda Merlot, Cabernet Sauvignon ve Kuntra üzümleri yetiştiriyor ve kendi şarabını kendi yapıyor. Bize de şaraplarından ikram ediyor. Bir arkadaşımın evinde yemeğe gelmiş hissindeyim. Neden peynir ürettiğini sorduğumda ise; İstediğim damak tadında peyniri adaya getirmek çok pahalı olduğu için ve zaman zaman da istediğim gibi peynir bulamadığımdan, yani sırf kendim için üretmeye başladım diyor. Selçuk arada içeri gidiyor, bilgisayarda çalan CD yi değiştiriyor. Yemek sırasında ortak tanıdıkların listesi dökülüyor. Bir dönem Manajans ta çalışan Zeynep, Manajans ın eski ajans yöneticisi Deniz Barlas ın Selçuk un komşusu olduğunu öğrenince çok şaşırıyor. Selçuk bir-iki telefon konuşması yapıyor. Yarım saat sonra Deniz Barlas ve Polente nin sahibi Hüseyin Bey geliyor. Masamıza oturuyorlar. Bu sırada Zeynep köpekleri görmek istiyor. Selçuk un Tara ve Uzo adında iki tane kurt köpeği var. Yeni şaraplar geliyor, purolar yakılıyor. Sohbet alıp başını gidiyor. Keşke diyorum Sakallı da burada olsaydı. Hüseyin Bey 4 yaşından beri adalı. Adada herkesi tanıdığı gibi İstanbul da da nerdeyse tanıdığım herkesi o da tanıyor. Adada yaptıklarımızı ve ertesi gün yapacaklarımızı anlatınca; Böyle olmaz canım, sizi bir gün de ben gezdireyim, adayı turist gözü ile değil, adalı gözü ile görürsünüz diyor. Bu teklife nasıl hayır derim? Polente ye tekrar gidersek Karadut, vişne ve gelincik votkalarını denememizi öneriyor. Deniz Barlas ın hikayesi de Selçuk inkinden farksız. Uzun yıllar yoğun tempo reklam sektöründe çalış, ajans yöneticisi ol, sonra Ben ne kadar böyle devam edeceğim, hayat geçiyor de ve yaşamak istediğin hayatı bul. Deniz in adadaki evi Selçuk un evinin yanında. Komşular. Ancak bir de şehirde (Adalılar adanın merkezine şehir diyor) bir evi var. Şimdilerde dükkan olmuş. Bizi davet ediyor. Bu sezon ilk defa yaptığı takıları, çantaları satacak, orayı hem dükkan hem atölye gibi kullanacakmış. Ertesi gün yola çıkmadan uğrayacağımızı söylüyoruz. Aslında kalkmak istemiyoruz ama ertesi gün dönüyoruz, yola yorgun çıkmayalım diyoruz It isn t easy to find Selçuk Aykan s house in the vineyard in the dark of the evening. Just after passing the second American fountain on the road leading to the inner parts of the island, we turn left and follow the unpaved road and reach the house in the vineyard. Selçuk welcomes us at the gate. Only 3 personnel work and maximum 12 people eat at Maya. Selçuk cooks all the food but he has got also an assistant who has just started to work there. First, we are served a dish full of different kinds of cheese which are all made by Selçuk himself. After that a dish of delicacy, beans cooked with olive oil, an appetizer made with carrots, vegetables and grilled meat are served. Meat is served on a wooden counter and we make our choice just as in luxurious restaurants. Selçuk is in charge of the barbecue. We don t have so many choices here, however, all is fresh and everything is cooked 2 hours before you arrive, Selçuk says. The first question he asks is, What s your star? I know what my star is but as I don t know what my rising one is I try to ask my mum with live connection. The time I was born is recorded and I search for my rising star on he ipad. I am the same star with Selçuk but our rising ones are different. Then, we start talking about business life. Selçuk worked in finance sector in many countries like Russia, England and Saudi Arabia. Later he worked as a consultant. And he decided to settle on the island when his daughter insisted on it. It was his daughter who discovered this house for him. Now he spends almost 10 months of the year in his house. In the finance sector I used to live for the others but now I live for myself, he says. He s had a small but professional kitchen designed. Nowadays, he offers his guests breakfast and dinner. In the vineyard of about 10 hectares surrounding his house he grows Cabernet Sauvignon and Kuntra grapes and makes his own wine. He offers us wine and I feel as if I am at a friend s house. When I ask him why he produces his own cheese, he replies, As it is rather expensive to bring the cheese I want to the island and I can t always find the right cheese, I started to make my of cheese just to suit to my palate. Selçuk comes in from time to time and changes the CD playing in the computer. The names of common acquaintances are mentioned during the dinner. Zeynep gets amazed when she hears that her old agency manager Deniz Barlas in Manajans she worked for is Selçuk s neighbour. Selçuk makes a few telephone calls. Deniz Barlas and the owner of Polente, Hüseyin Bey show up in half an hour. They sit at our table. Meanwhile, Zeynep wants to see the dogs. Selçuk has two wolves named as Tara and Uzo. More wine is offered, cigars are lit. chatting goes on and on. I wish Sakallı was here, I think to myself. Hüseyin Bey is an islander since 4. He not only knows everybody on the island, but he also knows almost everyone I know in İstanbul. When I tell him what we do and what we are going to do on the island, he says, That s not the way to see this island, I am going to guide you and you will observe the island not through the eyes of a tourist but through the eyes of an islander. How could I say no to an offer like this? He also suggests that we try black mulberry, sour cherry and poppy vodkas the next time we visit the island. The story of Deniz Barlas isn t so different from that of Selçuk s. Having worked hard for the advert sector for a long time promoting to be the manager now he says, I wonder how long this will last, life is getting shorter. Fortunately, he finds at last the way of life he prefers. Deniz s house is near that of Selçuk s. They are neighbours. But he has another house in the city (the islanders call the centre of the island the city ). Now it serves as a shop. He invites us there. He is planning to sell the accessories and bags there he first made for this season. We promise him to drop in before we set off the next day. Although we don t want to leave the restaurant, thinking that we shouldn t be tired the next morning we get back to our hotel. 94 İST&IST 26 95

8 Son gün sabah aynı zamanda Raki restoran olan otelin kahvaltı salonunda harika bir kahvaltı ediyoruz. Tabaklarımıza konan pişi ile (Bir tür pişmiş hamur içi boş ya da peynirli olarak servis edilir) çocukluk günlerime dönüyorum. Fonda Radyo Beyoğlu çalıyor. Şarkılar süper. Zeynep dün akşam Rıfkı ile birlikte yatmış, ancak akşam resepsiyonda bekleyen görevli bu durumu diğer arkadaşlarına söylemeyi unutmuş. Tevekkeli değil sabah herkes Rıfkı yı göremeyince panik halinde dolanıyordu ortalıkta. Kahvaltı sonrasında uğrayacağımız iki yer var. Adada yeni açılan Eski Postane Oteli ve Deniz Barlas ın Namazgah Meydanı ndaki dükkanı. Eski Postane Oteli 1800 lü yıllarda Bozcada Gümrük Karakolu olarak inşa edilen bina Cumhuriyet döneminde postane olarak hizmet vermiş, adını da zaten buradan alıyor. Otelin sahibi, aslında mühendis olan Füsun Hanım (Ölmez) uzun yıllardır yaz tatillerinde adaya gelenlerden. Sonrasında o da adaya yerleşme ve burada bir şeyler yapma kararı vermiş yılının Şubat ayında bu binayı bulunca da isteğine kavuşmuş. Biz gittiğimizde mutfak henüz kahvaltı servisini yeni bitirmişti. Kolalı beyaz örtüler, çeşit çeşit poğaçalar, gelincik, karpuz, domates, portakal kabuğu reçelleri, patlıcanlı börek, incir marmelatı Eski Postane nin kahvaltısı meşhur dememe gerek var mı? Otelin 7 odası var. Füsun Hanım her şeye çok özenmiş, bembeyaz dantelli, kenarlarında E.P. işli nevresim takımları, havlular, buram buram lavanta kokan yüksek tavanlı odalar. Sandviç diye de bir pencere yapmışlar. Adada denize gitmeden yanında içeceğini, yiyeceğini götürmek isteyenleri düşünmüşler. Haklılar da, zira adadaki her plajda yemek yiyebileceğiniz bir kafe, restoran vs. bulunmuyor. Füsun Hanım ın ada ilgili daha pek çok hayali var. İlk arzusu, otelin oda sayısını arttırabilmek. Daha oturmak istiyorduk ancak feribota binmeden Deniz Barlas ın da butiğine uğramak istediğimiz için Füsun Hanım a veda etmek zorunda kalıyoruz. İstanbul a dönüş yolunda yiyelim diye meyve alıyorum. Meyveler kese kağıdı ile veriliyor, poşet torba yok. Sonradan öğreniyorum ki 5 Haziran 2011 de Belediye naylon, plastik poşet kullanımını yasaklamış adada. Mutlu oluyorum, keşke diyorum büyük şehirlerde de bu sistem benimsense. On our last day, we have a wonderful breakfast in the breakfast lounge of the hotel which also serves as a raki restaurant. When I am served a dish of pishi ( a kind of cooked dough hollow or with cheese inside), I recall my childhood days. Super songs are heard from the Radio Beyoğlu in the background. I hear that Zeynep slept with Rıfkı last night, however, the attendant in charge of the reception forgot to tell this to his friends. Now I understand why everybody is rushing around in panic when they can t see Rıfkı. We still have two places to visit after breakfast. The Old Post Office Hotel, which is new on the island and the store of Deniz Barlas in the Namazgah Square. The Old Post Office Hotel, which was build as a Customs House in 1800s, served as a post office during the Republic days and named after it. Füsun Hanım (Ölmez), actually an engineer and the owner of the hotel, is one of those who used to come to the island during summer holidays for many years. Then, she decides to settle and do some work here. She achieves her aim when she finds this building in February in When we arrive, the kitchen is about to end the breakfast service. We notice white table clothes, variety of pastries, poppy, water melon, tomato, orange jams, eggplant pies and fig marmalade. I don t think I need to tell you that the breakfast in The Old Post Office is famous. The hotel has got 7 rooms. Füsun Hanım cared too much about everything in the hotel, which quite clearly reflects on the laced snow white bed sheets, towels and the rooms with high ceilings smelling lavender. The hotel prepares a kind of lunch box called sandwich for those who wish to take their food and drink to the seaside. Considering that there are no cafés, restaurants etc. where you can have something to eat and drink at the beaches of the island, this seems to be good idea. Füsun Hanım has got many more dreams about the island. Her first wish is to increase the number of the rooms of her hotel. We d like to stay here more, but because we want to call at the boutique of Deniz Barlas before we get on the ferry, we have to say goodbye to Füsun Hanım. I buy some fruits to eat on our trip back to İstanbul. Fruits are sold here not in nylon but in paper bags. As I know later, the municipality bans the use of nylon and plastic bags on the island in June 5, 2011, which makes me feel happy and I wish the same system was applied in big cities as well. Zeynep ile Namazgah Meydanı na yürüyoruz. Namazgah Caddesi üzerinde 27 numarada Deniz Barlas ın İsviçre Çakısı olarak nitelendirdiği dükkanı. Deniz Barlas ın elde yaptığı boncuk kolyeler, kendi tasarladığı gümüş takılar, her biri ayrı desende çiçekli kumaştan yapılmış çantalar, Lisa Corti yastıklar, özel yapım koltuklar satılıyor dükkanda. Özenle döşenmiş. Harika da bir bahçesi var. Bize erik şurubu ikram ediyor Deniz. Bahçede oturup sohbete dalıyoruz. Kışları bu dükkanı resim ve seramik atölyesine çevirmeyi planlıyorlar. İstanbul dan, iş hayatının kadınlar üzerindeki zorluklarından, yaş kaça gelince artık yetti deyip tempoyu bırakmak, işten sıyrılmak gerektiğinden söz ediyoruz. Ortak noktamız ada. Zeynep le Deniz e komşu olmayı planlıyoruz. Deniz bu kararımızdan çok memnun; O vakte kadar beklemeyin, sık sık gelin adaya diyor. İstemesek de kalkıyoruz. Yol üzerinde gördüğüm Bozcaada Kitapçısı na uğramak istiyorum ancak kapalı. Dükkanın kapısındaki yazı Bozcaada nın felsefesini ve aslında çoğumuzun hayalini anlatıyor; Bazen Kapalıyız. Zeynep and I walk towards the Namazgah Square. At no 27 on the Namazgah street we see the store of Deniz Barlas, which she calls Swiss Pocketknife. The handmade bead necklaces from Deniz Barlas, silver accessories designed by her, bags made with flowered material each of which is in different patterns, Lisa Corti pillows, specially made armchairs are all sold in this tastefully decorated store. It also has an excellent garden. Deniz offers us homemade plum drink. We begin talking sitting in the garden. They are planning to transform this store into a painting and ceramic workshop in winter. We talk about the difficulties the women suffer during their work and giving up all that stressful routine when we get old enough when the time comes. The island is our common subject. Zeynep and I plan to be neighbours with Deniz and she is very pleased to ear our plan. She says, You don t need to wait for such a long time, you should come here very often. We leave the store unwillingly. I want to call at the Bozcaada Bookstore but it is closed. The notice which says, We are sometimes Closed on the door of the store actually reflects the philosophy of Bozcaada Otele dönüp eşyalarımızı arabaya koymadan önce ModAda yı keşfediyoruz. Kendi üretimleri olan seramik biblolar ve kıyafetlerin satıldığı bu dükkândaki melek figürlerine bayılıyorum. Mavi tonlarda iki meleği başucuma koymak üzere satın alıyorum. Zeynep in tercihi kırmızıdan yana. Dükkândaki kıyafetler de gene dükkânın sahibi Hülya Koloğlu tarafından tasarlanıp dikilmiş. Alışverişimizi tamamlayıp öğle yemeği için Limani Otel e geri dönüyoruz. Raki Restoran ın en güzel manzaralı masasına oturuyoruz. Mutfak Ramazan Bey den soruluyor. Menüde asma yaprağında enginar, kabak çiçeği dolması, kabak çiçeği kızartması, kalamar, ahtapot, lor peynirli biber kızartması var. Yemek sırasında Ramazan Bey le koyu bir yemek sohbeti yapıyoruz. Yemeği sevdiğimizi ve değişik tatlar denemek istediğimizi anlayınca bize tereyağında karides getiriyor, böcek ayıklama işini Zeynep e bırakıyorum. Tatlı olarak ise fırında helva deniyoruz. Ramazan Bey bizim yeme potansiyelimizden biz onun yemeklerinden memnun masadan kalkıyoruz. Müşterilerimizin yaptığımız yemekleri beğenmesi, tabakların boşalması bizim için en büyük mutluluk diyor. Biz adadan ayrılırken Ramazan Bey in pek mutlu olduğunu söylememe gerek var mı? Zeynep in Rıfkı ile vedalaşması uzun sürüyor. Dönüş yolunda ikimiz de gayet sessiz haldeyiz. Neden dönüyoruz? diye soruyoruz birbirimize. Sonra bu soruyu sormanın bizi mutsuz ettiğini fark edip onun yerine Ne zaman adaya dönüyoruz? diye sormaya başlıyoruz. Before we go back to our hotel and pack our suitcases and put them in the car, we explore ModAda. I love the items in angel figures among the other things such as handmade ceramics souvenirs and garments sold in this store. I buy two of those blue angels to put on my bedside table. Zeynep prefers the red ones. The garments in the store are designed and made by the store owner Hülya Koloğlu herself. After finishing our shopping, we go back to Hotel Limani for lunch. We sit at the table with the best view in the Raki restaurant. The kitchen is in the responsibility of Ramazan Bey. On the menu are artichokes wrapped in vine leaves, stuffed zucchini flowers, fried zucchini flowers, squids, octopus, fried green peppers with special cheese. We start an enthusiastic conversation with Ramazan Bey at lunch time. When he understands that we love eating and try different tastes, he brings us shrimps fried in butter and I give the task of cleaning the shrimps from their crusty covers to Zeynep. As dessert we try helva baked in the oven. When we leave the table, Ramazan Bey is as much satisfied with our eating manner as we are with his foods. It is the happiest thing for us to see our customers empty their plates satisfied with our foods, he says. Do I have to tell you how happy Ramazan Bey is when we leave the island? It takes some time for Zeynep to say so long to Rıfkı. On our way back both of us are silent and ask each other the same question, Why are we getting back? 96 İST&IST 26 97
