Ayrıca araştırmada kullanılan veriler tek yönlü varyans, faktör ve çapraz korelasyon analizleri ile güçlendirilmiştir. Çapraz korelasyon analizi sonuçlarına göre amaç değişkenleri arasındaki ilişkiler geçmiş dönem ve mevcut döneme göre incelenmiştir. Araştırma sonunda yapılan analiz ve verilerden elde edilen çıktılar doğrultusunda, üretilen inek sütü miktarının yoğurt, tereyağı ve kaymak üretiminden daha yüksek olduğu, 2013-2014 yılları arasındaki inek sütü arzı üzerinde üretilen yoğurt, kaymak ve tereyağı miktarları ile zamanın istatistiksel olarak etkisi bulunduğu tespit edilmiştir. Anahtar Kelimeler: Süt, Süt Ürünleri, Regresyon, Küçük Kareler Tekniği, TUİK Abstract: In this study where the least squares technique and regression analysis are applied to data belonging to Turkish Statistical Institute for the years 2013-2014, the data are tabulated and evaluated functionally. Also data used in the research have been reinforced with one-way variance, factor and cross-correlation analyses. According to the results of cross-correlation analysis, the relations between the purpose variables have been analyzed as per the previous and current period. In line with the analysis conducted following the research and outputs obtained from data, it has been concluded that the amount of cow s milk produced is higher than the production of yoghurt, butter and cream; and the amounts of yoghurt, cream and butter produced and time are statistically effective on the supply of cow s milk for the years 2013-2014. INTRODUCTION UHPAD The least squares method (LSM) is an appropriate method to use in case the constant variance hypothesis is provided in regression analysis (Albayrak, 2008: 112). In this way, y variable is generally a function of x variable and the change on y variable depends on the value of x variable, which can be omitted under the control of the researcher. The author mathematically formulates this situation as follows: Y is written in an equation as Y = f (X). Simple linear regression model can be generally written as y = β0+ β1x + ε (1); or as yi= β0+ β1xi+ εi, i = 1,..., n (2) if we consider that we have an n quantity data couple as (y1, x1),, (yn, xn). Milk and the nutrients produced from milk are primarily acquired from the animals such as cow, goat, sheep, and buffalo that are highly productive. Milk is rich in protein, carbohydrate, fat, water, vitamins, and minerals; and, it is a very important nutrient for human life. Milk can be consumed just as milk in our daily lives, and it can also be consumed as milk powder, butter, yoghurt, and cheese after various processes. In the mentioned processes, the utmost attention is 32

UHPAD given to hygiene (ASÜD, 2010; European Commission, 2006: 7-8). When the production of milk, being a traditional product in Turkey (Screening Chapter 11, 2006), all around the world is analyzed, it is observed that 84% is acquired from cow; 12% is acquired from buffalo; 2% is acquired from goat; 1% is acquired from sheep; and, 0.2% is acquired from camel. Cream is a nutrient produced from milk and it can be defined as a process where milk is separated from its fat. According to this, the bigger the fat globule s diameter and viscosity are, the sooner the formation of cream occurs (Şimşek, 2010: 71). Cream is acquired from milk, which is highly rich in fat (Codex Alimentarius, 2011: 49). During the production of cream, the situation of physical conditions is important. With the separation of the layer of fat formed in the milk in 30-40 degrees room temperature, it is possible to mention the formation of cream (FSSAI, 2012: 51). Yoghurt is a sour milk production acquired from the milk fertilized from lactic acid bacteria that lives as symbiosis. In Turkish Food Codex Fermented Milk Products Statement, yoghurt is defined as fermented milk product, in its fermentation specifically symbiotic cultures of Streptococcus thermophilus and Lactobacillus delprueckii subs bulgaricus are used (Şimşek, 2010: 55). Yoghurt is not only produced from milk, but it can also be produced from fat-free milk powder. Additionally, the butter can be produced from yoghurt. For this reason, yoghurt has an important function in the production of butter. With this respect, yoghurt is considered as the second raw material of butter. Being an important nutrient, yoghurt consumption in our country is 20 kg/year per capita. This value is 40 kg/year in Finland; 35 kg/year in Bulgaria; 89 kg/year in Greece; and 113 kg/year in the USA (Şimşek, 2010: 57). Butter is a semi solid product, which is acquired from sour or sweet cream, either soured with bacteria culture or from sweet cream or whey powder. Being an important source of energy, butter contains A, D, E, K vitamins. Raw materials of butter are milk, cream, and yoghurt. Producing butter from yoghurt is unique to our country. The reason to produce butter from cream is that the fat rate of cream is high (Şimşek, 2010: 76). 33

UHPAD Exportation of milk products in Turkey is 168 million 868 thousand dollars in 2010. Exportation of cheese and curd comprises 60.41% of whole exportation of milk products in 2010. Milk, cream, and butter are the prior products in Turkey s importation of milk products. Switzerland, Australia, Turkish Republic of Northern Cyprus, France, Holland, Ukraine, the USA, New Zealand, Italy, and Denmark are the primary countries that Turkey imports milk products. The importation of milk products was 147 million 173 thousand dollars in 2010. According to the data of Turkish Statistical Institution (TSI) with regard to milk and milk products production in March 2014, the amount of the collected cow milk, seasonally and calendar adjusted, increased 2.2% in March. In the amount of calendar adjusted collected cow milk, 11% increase was recorded in March compared to the same month of the previous year. According to the calendar adjusted series, the amount of drinking milk produced by commercial dairies in March 2014 decreased 3.0% compared to the same month of the previous year; the production of cow cheese increased 5.5%; and, cheese products produced from sheep, goat, buffalo, and other mixed milks increased 22.9%. It is identified that the production of yoghurt in March 2014 increased 2.6% compared to the same month of the previous year; and, the production of ayran increased 10.5% compared to the same month It was observed in the conducted literature research that production and consumption of milk and milk products change in accordance with years. In this study, especially the mentioned changes occurred in the years between 2013-2014 were analyzed; and, it was handled with analyses whether there is a difference or not. CONCLUSION and EVALUATION In this study, relationships between the amounts of milk, butter, yoghurt, and cream produced between the years 2013-2014 were evaluated. From among the statistical analysis methods, analysis of variance, generalized least squares regression 42

UHPAD analysis, and cross correlation analyses were carried out. As a result of the practiced analyses, it is identified that the amount of the produced milk is higher than the amounts of produced yoghurt, butter, and cream. It is also identified that the amount of the produced yoghurt is higher than the amounts of produced cream and butter. As a result of the regression analysis, it is determined that the produced yoghurt, cream and butter, and time statistically have an effect on the cow milk supply between the years 2013-2014. According to the results of cross correlation analysis, relationships between purpose variables are analyzed in accordance with the previous period and the present period.
